Ingredients for the blondie bottom:
- 1 box of Organic Simply Sweet Vanilla cake mix from Foodstirs
- 9 Tbsp butter at room temperature
- 3 eggs
- 3 Tbsp milk
- 3 Tbsp yogurt (greek or plain)
- 1/2 tsp ground ginger
Ingredients for the frosting:
- 1 bag of Foodstirs frosting
- 4 oz cream cheese at room temperature
- Melted white chocolate about 1 cup
- dried cranberries about 1/2 cup
Preheat oven at 350 degrees. Mix in cake mix, eggs, butter, yogurt, milk and ginger in your mixer on medium speed for 1 minute, or until well blended. Add the white chocolate and dried cranberries. Mix until combined, maybe 15 seconds. Prepare a well greased baking pan 9″ x 13″ and add mix to your baking pan and spread evenly.
Bake for 20 to 25 minutes. Remove from oven. Since it is cake mix, the cake maybe a little domed, but we want it flat like blondies. I took a piece of tin foil the size of my baking pan and placed it over the top of the cake. With oven mitts on (it will be HOT) gently flatten the dome part of the cake so it is level with the sides of the cake where it did not dome. It should be about 1 inch thick at this point. This will make it more dense. let cool completely.
While you wait, mix the frosting together with 1 Tbsp milk and 4 oz of cream cheese. Whip the frosting for a couple minutes. Spread on the cooled bars. melt 1 cup of white chocolate. Scatter dried cranberries on top and drizzle the white chocolate. Cover and put in the fridge.
